ABOUT ME

My Photo
Miss Foo is a happily married thirty something, currently working hard at making ends meet and finding inspiration in a "9 till 5". She fancies herself as a modern day 70's throwback housewife Wendy, and whilst staring aimlessly at her computer screen, she likes to day dream about all kinds of crap, including: drinking wine, racing round in her Mini, shopping on ebay, having her hair cut & coloured, cleaning and tidying her apartment, booking a holiday, what to make for dinner and wondering what movie to watch later...

CARAMELISED APPLE CAKE WAS MADE FOR THE GALS LAST NITE...

...and it was a SUCCESS...  they even had seconds!

Here's how to do it yerself...
Time to make and bake: 55 minutes
Serves: 6
EASY!

YOU WILL NEED:
3 apples, cored and sliced
150g butter, softened
25g light brown muscovado sugar
125g golden caster sugar
2 eggs, beaten
125g self raising flour
1 tsp baking powder
pinch of ground ginger (optional)

Heat the oven to 180c/fan 160c/gas 4.  Put the apples in a large, non stick frying pan with 25g butter and muscovado sugar and cook over a medium heat for 3-4 minutes, until just tender and caramelised, stirring occasionally.  Remove from the heat.
Butter and line a 20cm round, deep cake tin...
Arrange the apples in the base...
Beat the remaining butter...
and caster sugar together until FLUFFY
Gradually beat in the eggs, then sift in the flour,
baking powder, and ground ginger (if you are using it).
Fold in gently until combined.
Spoon the mixture on top of the apples and level the
surface with the back of a metal spoon.
Bake for 30-35 mins, or until springy to the touch.
Leave to cool in the tin for 5 mins,
then turn out onto a serving plate.
Slice and dish out to your fwends -
Super served with creme fraiche.
YUMMIES X
